01 / ABOUT THE PLACE

About this place

At Tetsu-bo, where savory pancakes are carefully griddled on the flat-top, the signature Hiroshima-style niku-tama soba is a natural place to start. Fresh noodles shipped directly from Hiroshima are pressed onto the griddle until the surface turns delightfully aromatic and crisp. This crunchy texture contrasts against the soft batter layers and the natural sweetness of cooked cabbage. Cut into manageable pieces before being brought to the table on a plate, it can be eaten piping hot without fuss. For those who prefer a fluffier pancake, the kitchen also turns out Osaka-style butatama, allowing diners to choose between regional Japanese traditions to suit their mood.

A well-chosen selection of toppings makes it easy to tailor each pancake. Crisp garlic chips, traditional crunchy squid tempura crisps, or an abundant layer of chopped scallions bring extra texture and depth to the foundational flavors. The menu also offers well-rounded compositions ready to order, including the hearty Powerful-yaki packed with stewed beef tendon, squid tempura crisps, and a soft-cooked egg, or options layered with molten cheese and chewy mochi.

While waiting for the pancakes to finish on the griddle, an assortment of small plates keeps the table lively. The simmered beef tendon—brightened by citrusy yuzu ponzu and a mild touch of heat that flatters the tender meat and konjac—pairs naturally with an introductory glass of beer. Teppan-cooked sides like thinly rolled tonpeiyaki and baked mountain yam with melted cheese also lend themselves well to sharing.

Daytime visitors will find weekend lunch sets complete with a small beef tendon dish alongside dessert pairings, while evenings take on a relaxed, leisurely rhythm suited to drinks and griddled fare. Seat reservations are accepted, and the shop accommodates cashless payment via credit cards, PayPay, and multiple mobile payment platforms.
